2 large cloves
1 (12 fluid ounce) can or bottle
cola-flavored carbonated beverage
freshly brewed strong coffee
1 1/2 teaspoons
freshly ground black pepper
crushed dried rosemary
Louisiana-style hot sauce, or to taste
1 (1 1/4 pound)
beef skirt steak - trimmed of large fat chunks
salt to taste
cayenne pepper, or to taste
Superb! Made this for supper tonight (as per recipe, except cooked to well-done as wife refuses anything less). Wife, who is not a fan of red meat cleared this off her plate in record time. "Would you like more?" "Yes, please!" Daughter, who follows her mother when it comes to aversion to any red meat speaks up, "I'd like some more, too, please." Whoa! I've never heard that before! Asking for more meat?! Served it with "cole slaw" recipe from this site (the one without mayo - wife doesn't like mayo either) french fries, desert was apple pie ala mode with caramel syrup. Big smile on wife's face + daughter happy = Dad glad. TY Chef John and allrecipes.

Holy Cow!!!! No pun intended!! Where to start, this is beyond yummy. I'm glad I watched the video before I grilled the steak and it was beyond delicious!! I also reduced the marinade and put over the steaks when they were finished. I have to admit that I was a bit skeptical with the combination of the ingredients in the marinade but this is the best I have ever eaten. I made baked potatoes and steamed cauliflower broccoli combo. It was a perfect Sunday dinner. I bow to you sir!!! :)
This recipe was very tasty. Next time, I will let it marinate for about 48 hours to really intensify the flavor but I do think it was a keeper just as written. It sure did dress up an otherwise boring skirt steak!
OK I'm going to be the first to rate this. I don't think I'm going out on a limb, either. Chef John makes fabulous food, and in the video, the meat looked perfect. Think I'll serve it with mashed potatoes or rice to take full advantage of that sauce.
Meat was yummy and flavorful. Will make again.
I am compelled to write this review to let everyone know DO NOT LET ANOTHER BBQ SEASON GO BY WITHOUT MAKING THIS RECIPE!!!
Did you hear me??? I mean this recipe's marinade/sauce is the true star. It is a blend that does not resemble cola, coffee, hot sauce in any fashion in the end, yet combined and set, then cooked resembles a sauce that will make you a star!!!
If you are afraid of heat, then back off the hot sauce, and cayenne pepper. DO NOT omit them, as they are a intricate part of the flavor, simple add a drop or two of hot sauce, and the pinch of cayenne!
I served "Roasted Parmesan Rosemary Potatoes" and "Grilled Vidalia Onions" (recipes from this site) with this steak, but I do plan on making this steak many times more this summer.
I then plan on making this marinade/sauce for a stuffed round steak recipe that I have in the fall and winter!!!
I have followed Chef John for a while now, but I am now a devoted fan!! Thanks for the easy, flavorful, star making recipe!!!
Very good. I think that it will be marinated longer next time, I did 24 hours, but will do 48 next time. Also, maybe a thicker cut of meat too.
