I usually cut the chicken breasts up in to bite size chunks and saute them with the first ingredients. A few minutes before I add the spinach I also like to toss in a handful of sliced almonds to give it a little crunch. Deeelish!!!

I like anything that I can prepare quickly after a busy day at work. The fact that it is healthy is an added plus. Everyone in my house enjoyed this. Next time I will double or even triple the amount of spinach for my family of 4.

Made the spinach a creamed spinach w/ mushrooms. Topped it with the chicken, minus the apple cider. Was great! We liked it, nice n tasty!

Quick to throw together with things I had on hand! I really enjoyed how each of the ingredients for the chicken played into making the dish delish! Fresh thyme and oregano from my herb pots mingled very nicely with the garlic and a touch of heat from the cayenne! I almost forgot to add the vinegar--didn't even see it when I read through the recipe! Like Naples reviewed, I popped this in the oven (I had oven-crisped potatoes in there already, so why not... plus I don't have a grill at my condo). Plated beautifully with the sauteed spinach! Used a bit of white onion in place of green because I forgot to grab a bunch at the store. We really enjoyed this with oven-crisped potatoes on the side.

Tasty, easy to prepare and fresh great flavors. I marinated the 3 chicken breasts in the eight ingredients. I omitted the cayenne pepper but added paprika instead. I sauteed the chicken in olive oil for 7 minutes or until it was golden brown and juices were clear. I then flipped it over to the other side. Once it was done I set the chicken aside. To the same skillet I added olive oil, a couple of minced garlic and then the mushrooms. I cooked the mushrooms down for about 3 minutes then added the green onions and organic baby spinach leaves. I loved the great flavors from the chicken marinade and the chicken was tender and tasty. I could taste the fresh herbs and the slight teeny tang from the cider vinegar. Spinach and mushrooms are one of my favorite vegetables and so I added a little more mushrooms to the sautee. This dish went nicely served with hot rice.

This was good, but needed much more flavor. The chicken was a little bland as was the spinach. Also the spinach needs to be doubled. It was just 2 adults and a toddler eating the spinach and there was hardly enough for one serving each. I will make this again, just add more seasoning and spinach.

I give this 5 stars...I followed the recipe for the chicken breasts as is, the only thing I did different was to saute them in a pan over medium high heat. The flavor was just enough, though I realize some may want stronger. I made the spinach with sweet onion (no green onions in the house) and I like a lot of garlic so I was generous with that. I seasoned it with a little salt and pepper. Hubby loved it, I loved it! The one kid...not so much, but what does he know?? Will make this again!! Thanks Michelle!
