"This easy gourmet sandwich is so good, you would serve it to the president if you had him over for dinner. As far as grilled cheese goes, this is it! Serve with a nice gourmet Italian salad."

1/4 cup butter, softened
1 cup freshly grated Parmigiano-Reggiano cheese
8 slices cooked bacon
4 slices Cheddar cheese
8 slices sourdough bread

DIRECTIONS
In a small bowl, mash together the butter and Parmesan cheese until evenly blended. Make sandwiches by placing two slices of bacon and one slice of Cheddar cheese on half of the bread slices. Top with the remaining slices of bread.
Heat a large skillet over medium heat. Spread some of the butter mixture on the top of each sandwich. Place sandwiches butter side down in the skillet. Spread the remaining butter mixture on the other sides. Cook until golden brown on each side, about 3 minutes per side. To serve, cut in half diagonally.

These were pretty good, but my family asked me to make my normal grilled cheese next time--my husband said the parmesan overpowered the taste of the cheddar. I followed the suggestion of lynniescorner and added some garlic, and I enjoyed that added flavor. Thank you for sharing your recipe, nevadamommy!

I had never thought of adding things to the butter on the outside. I think this made the sandwich beyond the sandwich we had when we were kids. I took it one step further and added one fresh chopped garlic clove to a double batch. We LOVE garlic. I didn't have bacon so let them choose which luncheon meat the wanted, if any. I will definitely make my sandwiches like this from now on! Great recipe.

Pretty good. The only things I changed was add a tsp. of garlic powder in with the butter and added sliced tomatoes on the inside of the sandwich. Another change-up from your typical grilled cheese. And you know what I say? Bacon makes darn near everything better!

LOVED this! Omitted the bacon and used ham in it's place. Also, added about 1/2 a clove of garlic to the butter parm-regg mixture. Absolutely wonderful! Thanks will make this again and again!

Very tasty. I didn't add the bacon, since I was serving with soup. Used freshly grated parmesan and an extra sharp white cheddar. My 11 month old even liked it.
