A timeless classic. One tip I learned along the way -- a book recommended shredding the cheese(s), instead of slicing. You get a better melt. Not necessary, but a thoughtful suggestion.

instead of butter use a light spread of mayo. also, a couple slices of bacon inside to spice it up.

This is exactly how I make my grilled cheese sandwiches. Add a slice or two of deli lunch meat if you want more than cheese.

Like others, I occasionally use different cheeses like provalone or mozzerella. My husband also likes to put garlic powder on the butter before you fry it!

This is an excellent way to make a basic grilled cheese. We eat a lot of these. Its a staple meal in our family, with soup, canned if we are low on money. When we can afford it, we upgrade the bread and the cheese, also upgrade to homemade soup. My favorite way is to use swiss cheese, sourdough or wheat bread, and add some crushed red pepper on top of the cheese. MMMMMMM!

awesome recipe! i went all out and made a triple decker :) like most of the cooks on this site, im quite an accomplished cook (at least, my husband thinks so) but its nice to get back to the basics once in a while and see how everyone else does it...looking thru the reviews i found 2 great tips: cook on med low-low heat, and use cookie cutters for fun shapes! my 3 yr old loved her snowman GC sandwich. for the triple decker, i did a regular grilled cheese sandwich (becel olive oil spread with omega 3s) and grilled both sides, then on one grilled side i layered 2 slices of honey maple ham, paper thin cucumber slices, avocado slices and some baby spinach with the stems ripped off, then topped with another slice of buttered bread. flipped and grilled the 3rd layer. delish! healthy and indulgent. oh and i spread mayo and mustard on the inner bread layers. oh and i used ancient grains bread for a nice nutty crunch. so good.

I think this is the first thing other than scrambled eggs I learned how to make, somewhere in my teen years. I thought you might like to know how awesome one of these is made with a thick slice of tomato right in the middle. Mmmmmm

I feel like I discovered the best way to make grilled cheese ever, don't know anyone else that does it like this, I tell everyone...how to make the most awesome grilled cheese ever and make enough for a family so they are all done at the same time? Buy a loaf of nice and wide italian bread, cut nice size slices on the diagonal (looks nice!) put together like the recipe says....and you can add whatever you like, we like turkey breast and bacon with ours! Put your sandwiches together using two slices of cheese, put your lunchmeat inbetween and BAKE THEM! I bake them at 400 degrees, keep an eye on them, check after 5 minutes or so....when you lift them up you will see the most beautiful crusty sandwiches. Flip when you like the way they look and get the other side nice and golden and toasty. You have to use BUTTER. You can bake just regular grilled cheese too, its so nice because you will have 6 sandwiches done and hot at the same time. Let me know if anyone tries this....I just love them this way.

The key is to butter both sides of each slice of bread. Always use sharp cheese too!

thank you for adding this recipe. it was exactly what i was looking for. i didn't learn to cook the conventional way with the easiest stuff first and so on. i can make just about anything and make it well, but i had never made grilled cheese before. thanks from those of us who are definitely not beginners...we just haven't gotten to some of the basic stuff yet.
