My variation on this classic recipe is to use rye bread, spread a thin layer of spreadable cream cheese on one or both slices (the surfaces facing the cheese), and use Monterey Jack cheese. Then butter and fry as usual.

MmMMmm I love grilled cheese sandsiches! I use mayo on the bread instead of butter and sometimes pan fry bologna then add it into the sandwich when I add the cheese. Ive tried it with pretty much all the cheeses and its yummy every time!

I had to laugh that someone submitted this as a recipe, but it also looks like the place to put our favorite variations, so here goes.... Put a thick slice of sharp cheddar cheese on a french baguete, with a slice of granny smith apple, and cook on a george forman grill (great alternative to buying an expensive pannini press). No need for butter as the forman is nonstick, you just might want to press down on the lid a little while it cooks.

I changed this recipe, so I don't know if I should give it 5 stars, however, the method deserves 5 stars. I took some advice from previous reviewers which made this seemingly simple sandwich into a fantastic and quick snack! I spread a minimal amount of light mayo on the bread instead of the butter. One slice of sharp cheddar cheese and one slice of good ol' ham out out of the meat drawer from the fridge. Did the method as directed but covered to ensure the cheese melted. After sandwich was done (all of 5 minutes if that), added some seasoned salt and pepper and chowed down! Thanks for the recipe and advice from you reviewers. Sometimes the simple recipes are the best.

When I saw this recipe listed I had to check it out, thinking it was something different or unique..nope, just the wonderful ole grilled cheese. These are always great, try peanut butter instead of cheese...Yum!

This is such a simple and classic way to make grilled cheese. I love it. I always add turkey or ham to mine, and have it along with tomato soup. It's one of my favorite meals!

Something my family always did, which I didn't see listed here, is cook the grilled cheese on a Waffle Iron. Make sure you either don't care about the waffle iron, or you have a good non-stick waffle iron. It can get messy, but it is SOOOOOOO good.

I don't use butter at all. Sometimes we use sharp cheddar, havarti, mozzarella, use a thin slice of tomato, and always use mayo. I use my George Forman Grill, make my tomato soup at the same time and never worry about burning my sandwich. Hubby loves them done this way.

Of course-the classic grilled cheese sandwich- a true classic in my book. So creamy and delicious, I love this sandwich. It is perfect for a rainy day with some tomato soup for dipping. Excellent recipe, and easy to remember. I use 2 slices of cheddar cheese for each sandwich, do this if you like it really cheesy!

I make mine this way as well. Cast-Iron has the perfect grill cheese skillet it is small and squared and fits one sandwich perfectly! I dunk my sandwich in ranch spiked with tabasco.

I will add my variation to this too... I butter and pam spray the pan, and I fry some taylor ham or bacon and add it to the sandwich. Delicious! I also make it without the taylor ham/bacon and make my son his "toast cheese samwich"
