Ingredients

  • 3 cups cooked rice
  • 1 cup minced fresh parsley
  • 1/2 cup shredded Cheddar cheese, divided
  • 1/3 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 garlic clove, minced
  • 2 eggs, lightly beaten
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup vegetable oil
  • 3 tablespoons lemon juice
  • 1 tablespoon grated lemon peel
  • 1 teaspoon salt
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon pepper

Directions

  1. In a bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and peel, salt, seasoned salt and pepper; mix well. Stir into the rice mixture. Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 40-45 minutes or until golden brown.
