This is an odd mixture- I wasn't too sure about it at first but it came out great. We all loved it even the kids. I did use Jasmine rice for it which was great. I use that rice in all my dishes. But I bet this one would be good with brown rice as well. This one's a keeper- thanks for sharing.

Amazing! Worth the calories. I used light sour cream (not that it matters at this point) and it still tasted great. I had to cook it a little longer.

I like spicy, so I used pepper jack cheese in lieu of the regular monterey jack and added one more can of chiles. I also drained a can of extra hot Rotel and added that, as well. Gotta have lots of fresh ground salt and cracked black pepper! If I had it on hand and needed to use it I'd add some fresh chopped parsley, as well.

I added adobo seasoning and some chopped garlic, and we still thought it was a little bland. I will try again, but use chicken broth to cook the rice and add some more seasonings, maybe the cumin another reviewer mentioned. Good base recipe, but needs tweaking.

My family loved it.. I added garlic powder and some cumin(cause I love the taste) I made this a second time and added some chorizo to it and put in 1/2 pepper jack cheese and 1/2 monterey jack cheese. It was fantastic!! Great this way for a complete meal.. Wish there were more stars to give it. Thanks for a great recipe..

Super easy to prepare. The finickiest eater in the house had a second serving at dinner and took some home for the next day. Everyone else enjoyed it as well. It was very popular at dinner last night. I used garlic salt instead of plain salt and added some black pepper. Now that I've eaten it, I think the previous reviewers additions would be really delicious too. :) Thanks for posting such an easy adn super crowd pleasing dish.

I love this rice! My DH is not a fan of sour cream so I used only 1 cup and only 1 can of chiles. Added 1 T of pimentos for color. Used 2 cups of shredded colby/monterey jack. I would consider adding some salsa next time. Thank you for the recipe.

Very yummy! Added some cream for sour cream, added cumin and garlic powder as well as a few shakes of Jalepano hot sauce. I had a variety of cheeses on hand too, so added some gouda, black pepper cheese and co-jack. Also added 5 cups of rice instead of 4.

This was a real winner! I made for a teacher's dinner at school and everyone loved it. I did add garlic powder and topped it with French's Original French Fried Onions, that gave it a nice crunch! Yum!

This is a great dish to serve with Mexican food. The only thing I added was some ground cumin seed for a little bite. For color I added some grated parmesan cheese and paprika. It's pretty much of a failproof recipe and a great use for leftover rice.
