"An old favorite gets a Southwest twist in these savory sandwiches suggested by Emily Hockett (above with husband Van) of Federal Way, Washington. 'I make grilled cheese often in summer when it's too hot to use the oven,' she relates. 'It is a nice light lunch or dinner.'"

4 slices bread
4 slices Cheddar cheese
1 (4 ounce) can chopped green chilies, drained
2 tablespoons butter or margarine, softened
Add to Recipe Box

DIRECTIONS
Top two slices of bread with two slices of cheese; sprinkle with chilies. Top with remaining bread. Butter the outsides of sandwiches. In a large skillet over medium heat, cook sandwiches on both sides until golden brown and cheese is melted.

A Classic!! I grew up in Arizona, and we ordered these at the A&W Root Beer Stand. Try using Montery Jack cheese, also. Yummy

This was decent, but I think it really needs something else. The green chilis have a flavor that just doesn't seem all that great by itself. I think the addition of sliced tomatoes would perk this up a little bit, or maybe even a sprinkling of garlic salt. Thanks for the quick, light dinner though! :)

This was good, but I couldn't really taste the green chilies. It tasted like regular grilled cheese to me.
