A salty-sweet side dish sure to please veggie-lovers and sweet-tooths alike! You can normally find a good-sized bag of fresh green beans at a fruit stand or farmer's market for about a dollar.

Steamed green beans tossed with butter, lemon zest, lemon juice and toasted walnuts. This is excellent with asparagus also. Pecans can be substituted for walnuts. 

Marinated Green Beans with Olives, Tomatoes, and Feta

Just like the name of the dish implies, this recipe makes a lovely side dish of green beans, kalamata olives, and tomatoes. These items are tossed with red wine vinegar, garlic, and oregano before being finished with a sprinkling of feta cheese. Allow the flavors to marinate together overnight for even better results.
