These green beans and potatoes are a spectacular dish. I have been making them for years in large quantities for special events at my church. The smoked turkey tails make an excellent broth that is seasoned beyond words. Let the meat cook until it falls off the bone for the ultimate flavor, at least 2 hours. 

Marinated Green Beans with Olives, Tomatoes, and Feta

Just like the name of the dish implies, this recipe makes a lovely side dish of green beans, kalamata olives, and tomatoes. These items are tossed with red wine vinegar, garlic, and oregano before being finished with a sprinkling of feta cheese. Allow the flavors to marinate together overnight for even better results.
