I used canned French Green Beans, small tender peas and tender corn in place of the frozen vegetables which I didn't have. Added shredded carrot for extra crunch and color.

My husband and 1 year old loved this salad. I used 1/2 cup of sugar, and instead of the 1/3 cup of cider vinegar I used half red wine vinegar and 1/2 water (to make 1/3 cup) and 1 tbsp. of apple juice. It was delicious and inventive!

This was surprisingly good. I needed a light side dish to go with horseradish whipped potatoes and Paprika Pork Chops(also from this site). This fit the bill. I didn't have the pimento or green pepper and it was still good without it. I really enjoyed the tanginess of the dressing. A nice side that requires everyday ingredients but is a little different

This salad was soooo good. I made it for a Rainbow Tea at my church and everyone raved. They all requested it for our Girlfriend Luncheon coming up in May. I did use red onion because I had some left over from another salad I'd made and it added more color. I had more and less of some ingredients, but it still turned out fantastic. It tasted even better the next day. Will definitely make again.

Wanted something a little different for my sister's baby shower and this delivered. Nice combination. I subbed green onion tops to tone down the onion flavor, and used a yellow pepper to add another color of the rainbow. Made a few days in advance, and drained off extra dressing prior to gathering. Sidedish hit of the shower.

What an unexpected, awesome salad! I only used 1/2 cup of sugar instead of the 3/4 cup that was listed. It's such a contrast of flavors...sweet and vinegar! I will DEFINITELY make this again!
