INGREDIENTS
4 medium tomatoes, cut into 1/4 inch slices
1 small red onion, thinly sliced and separated into rings
3/4 cup crumbled feta cheese
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
1 tablespoon olive or canola oil

DIRECTIONS
Arrange tomato and onion slices on a plate. Sprinkle with the feta cheese, parsley, salt and pepper. Drizzle with oil. Cover and refrigerate for 15 minutes.

The first time I made it exactly as written then the next time I chopped the tomatoe and onion and added the rest of the ingre. and refrigerated. I like both ways. Any way you fix it it's very good!! Thanks!

This makes a great side dish to a nice greek dinner. I let mine sit in the fridge for about an hour and added a little more ground black pepper.
