INGREDIENTS
2 cups fresh green beans (2-inch pieces)
1/2 small sweet onion, cut into thin wedges
1 tablespoon olive oil
1 small tomato, cut into eighths
1/2 teaspoon dried oregano
1/4 teaspoon salt
Dash pepper

DIRECTIONS
Place the beans in a saucepan and cover with water; bring to a boil. Cook for 3-4 minutes or until crisp-tender; drain.
In a small skillet, saute onion in oil for 3 minutes. Add the beans; saute for 5 minutes or until tender. Reduce heat. Add the tomato, oregano, salt and pepper; cool 1 minutes longer or until heated through.

This was a GREAT side dish. Nice flavors and so refreshing! The only thing I did differently was when I sauteed the onions and beans for five minutes I added 3 cloves of chopped garlic. Only because I love garlic in everything! My husband also loved this! Thank you!

This is a good recipe. The first time I made it, I thought it needed a little "something". The next time I fixed this, I sauted minced garlic with the onion and added red pepper to the spices. I also used the spices called for for 3 cups of beans with only 2 cups of beans. This did help some. It is a colorful dish. Thank you, Michele Scharf, for the recipe!

This recipe was good, but a little too much oregano for my taste. Next time I make this I will half the amount of oregano I used. I also added a little Italian dressing which was a nice touch. These green beans were ok served warm, but I think they would be better served after a day in the fridge and served cold.

These were SO good! I added bacon and garlic to kick up the flavour and used steamed green beans which I mixed in at the last minute. Very tasty!

This is really good! I also have made it with garlic, & added feta & sliced black olives & served as a main (vegetarian) course. If you use fresh green beans, cut them in half- it's easier to eat this way.

This was a delicious, healthy side dish. I was going to make sauteed mushrooms in addition, but ended up just adding the baby bellas to this. It was excellent, but would have been without as well.
