This tangy and sweet dish is perfect served over fluffy white rice. Be sure and not to overcook the squid or it will become tough.

Santiago's Stuffed Squid

This recipe originates from Spain. It's tender and moist, not a typical chewy squid dish. It's simple to prepare, rich, scrumptious and definitely a favorite in our home! You may use butter instead of olive oil and black pepper instead of paprika if you prefer.

Greek Steffotto

I always make this in the fall. It makes the whole house smell wonderful as it cooks. The combination of cinnamon, brown sugar, and vinegar give this a great flavor. Serve it over rice or noodles.

Fakes (pronounced 'Fah-kehs') is a staple in the Greek kitchen, and an especially filling meal. It is traditionally served with a drizzle of olive oil and lots of vinegar. Though the vinegar is of course optional, try it--it lifts the lentils and adds another dimension of flavor!

This is a starters Greek recipe that is also eaten as an ouzo 'meze' (snack). It is a delicious dish that I'd only tried in restaurants but when I tried to make it at home I found out I made it as good and delicious. With a small alteration of adding pasta you can turn this dish into a delicious seafood pasta dish.

This is a wonderful and easy stovetop preparation that is a hearty meal for the whole family. I often serve it over rice or orzo, with a nice tomato and cucumber salad and good bread...A simple, fresh, and delicious taste of the Greek Isles!
