I made some changes suggested by someone here, plus some of my own, and this turned out excellent! The children didn't guess it had spinach in it. I used fresh spinach, I caramelized the onions then slightly cooked the celery and green pepper too, I skipped the mayo and doubled the sour cream, I omitted the bread crumbs. I didn't have lemon pepper so I used pepper, garlic salt and creole seasoning. The parm topping was delicious!

This was a pretty great tasting dish with a few modifications... I sauteed the celery, pepper and onion a bit before adding to the mix, sprinkled the chicken cubes with some garlic powder while they were cooking, used only half the jar of pimientos and mixed the cheese in to the casserole instead of putting it on top. I baked it for about 30 minutes covered w/ foil so that the pieces of spaghetti didn't burn, then I uncovered & added the bread crumbs and parmesan. I also took the advice of another member and mixed the soup, sour cream and mayo before adding it to the rest. I enjoyed this dish and even had enough to freeze for my husband to pull down and reheat when I am out of town!

This dish was pretty flavorless. I made enough to have lunch leftovers for a few days and definitely regretted it! I would not recommend this.

What a unique recipe...well at least my husband and I thought so! The only modifications I made were omitting the pimento (didn't have any on hand) and mixing all the ingredients together and then adding the mix to the pasta pasta, rather than add them one at a time. I figured it would be easier to get it thoroughly mixed this way. Next time (and that will probably be soon) I will add more cheese :-D Thanks!
