An authentic Greek salad from Oia, Santorini in Greece. Traveling through Greece, I feel in love with the Greek salads on the islands because they had no lettuce. When I came home, I was determined to replicate that salad for family and friends. This is a great green salad recipe because extra salad can marinate in the dressing overnight and be eaten the next day in pita pockets as a sandwich.

Chopped veggies - tomatoes, red onions, cucumbers, and green peppers. But in this version, the dressing is crisper - only olive oil with a splash of lemon juice. Chill and just before serving, sprinkle crumbled feta on top.

If you are tired of the same old potato or macaroni salad and want raves, try this at your next picnic or pot luck! This recipe can be easily adapted depending on the veggies and dressing you use. Salad can be made the night before; however, add dressing just before serving. 

Sylvia's Easy Greek Salad

This is a classic, but easy Greek salad with a simple, simple dressing. Chop and dice all the veggies - bell peppers, cucumbers, tomatoes, red onions, and olives. Then whip up the vinegar and oil dressing. Toss one with the other, and add crumbled feta cheese.

An oregano/olive oil dressing with a dash of lemon makes this traditional salad just a bit different. All the veggies, including the Romaine, are chopped so when the salad is tossed, each bit of tomato or pepper, or cucumber gets its equal share of dressing. Six servings.
