Grapefruit Tea Cookies

"My mother originally made these in her culinary arts class in high school in 1975 and they were made with lemon. I love the lemon but I wanted to make these and realized I didn't have any lemons so I used what I did have, grapefruit. They turned out wonderful! I bet they would be good made with oranges too. The glaze is different from your regular iced cookie with the granulated sugar giving a nice texture on top. Yummy!"

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Whisk flour, baking soda, and salt together in a bowl.
  2. Mix 1 1/2 teaspoon of grapefruit juice into milk in a small bowl, and set aside for about 5 minutes. In a large bowl, mash the butter with 3/4 cup of sugar until creamy and well combined, and beat in the egg and grapefruit zest until thoroughly combined. Beat the milk into the butter mixture about 2 tablespoons at a time, alternating with the flour mixture, until the dough is smooth. Drop by teaspoons onto ungreased baking sheets, about 2 inches apart.
  3. Bake in the preheated oven until set and very lightly browned, 12 to 14 minutes. Cool on racks.
  4. Make glaze by mixing 3/4 cup sugar with 1/4 cup grapefruit juice. Brush glaze onto cooled cookies; let stand until glaze is set.

5 Stars from me! These are wonderful. My brother was thinking about cutting down his grapefruit tree, but these cookies will change his mind. I upped the flour to 2 cups and they turned out perfect. By the way, I also graduated high school in 1975, and lemon tea cookies were big then, but these are great. Thanks.

Wanted to try something with grapefruit but this recipe didn't work out. I used 2 cups of flour but the dough was still too soft for cookies so I added some chopped nuts and thought I would try making bars. The pan was too small so it turned out like cake. Right out of the oven it was okay (the glaze I threw out after mixing it and tasting it)but the next morning the "cake" was heavy and dried out.

These were delicious! I had to bake them at 325 because my oven runs hotter than normal, but great recipe!

Really good and easy, cake-like cookies. I used a red grapefruit and doubled the zest and added a touch more juice because it's so mild. They came out perfectly. Delicious! I'm going to try them with Lemon for Mother's Day. :0)

The glaze makes these taste great! I made them with lemon juice instead, and they tasted like lemonade sponges. But they are a soft, cakey cookie, not really my 'cup-o-tea'

I made these cookies for a Downton Abbey tea party, and my friends went crazy for them! I added more grapefruit zest than called for.
