THIS DISH is quick to prepare, but to save time, I'll often boil the sweet potatoes in advance, then complete the recipe the next day. Smashed Sweet Potatoes

Sweet potatoes with orange and bourbon. I use 1/2 cup sugar but if you prefer candied sweet potatoes, use the whole cup. Orange juice can be substituted for the bourbon if you are serving to small children.

Twice-Baked Sweet Potatoes are very do-ahead. If you find yourself in a pre-feast frenzy, skip spooning them back into the sweet potato cups and just warm the puree and serve it as is. 

Kentucky Bourbon Sweet Potatoes

You'll be tempted to serve sweet potatoes for breakfast, lunch and dinner. These are pretty special. Sliced potatoes are doused with sugar, bourbon, vanilla and butter and then baked until the sauce is absorbed and the sweet potatoes crusty and brown.
