My Mother's Mac and Cheese

I remember my mother sending me to the store for '15¢ worth of store cheese'. The butcher would cut off a slice from a gigantic round of cheese covered with a wax-coated cloth. Mother would then blend that cheese into this tasty dish. Today, the memory of Mother's cooking is like food for my soul.

This recipe is one of my favorites for a luncheon dish or a quick and easy meatless meal. For extra flavor, I'll sometimes use homemade bread or a specialty bread such as Italian, French or sourdough. -Janet Scherffius, Mountain Home, Arkansas

Smoked Gouda Mac and Cheese

This is a marvelously smooth mac and cheese with a bit of a bite. My family loves this. I got the idea from a recipe made on a popular cooking show, and adapted it to my own recipe and tastes. Delicious contrast if served with a 'sweet' main dish.

For rich, warm comfort food start with a simple roux of butter and flour. Add milk and sharply flavored Cheddar and Parmesan cheeses to make a velvety sauce, then bake with macaroni. Buttered breadcrumbs and a dash of paprika make an attractive crust.
