Excellent bread! I used all-purpose flour, reduced the recipe by 1/3, and made two loaves in disposable 9"x5" pans - they came out great. I did find that the dough rose very quickly on a humid summer day in New England. The first rise took about 45-50 mins, but the second and third rises only took about 20 mins each. Also, I took the loaves out of the oven after about 30-31 mins, and they were perfect - so keep a close eye on them as they're baking! This bread is exactly what I was hoping it would be: soft, slightly chewy white bread with a flavorful top crust and a hint of sweetness throughout. It's great with butter and a little cinnamon sugar; it also made for a very tasty ham sandwich.
