Mom's Fruitcake

This fruit cake is made with cherries, pineapple and walnuts, then frosted with cream cheese frosting. I entered it in the county fair and took first place plus the gold ribbon which entitled me to enter the State Fair.

Crushed Pineapple Fruitcake

This is a very good cake for Christmas. Do not double this recipe. You don't need to age this cake. Pineapple extract can be substituted for almond extract if you'd like your cake even more pineapple tasting! Originally submitted to CakeRecipe.com.
