Venison Cheddar-Jalapeno Summer Sausage

This is a nice change from regular summer sausage. The cheddar and jalapenos give it a bit of a spicy kick that is sure to please at gatherings. We serve this at the 'Beast Feasts' we host every year where all the dishes are from wild game. This recipe works well with beef as well.

My husband is a avid hunter and we make this sausage every year. We add pork to the venison because the venison has such a low fat content. For the pork we get really fatty looking roast ground at our grocery store.

The finest cut of venison, the tenderloin is marinated in a red wine and vinegar sauce overnight then grilled or roasted. Medium rare is an excellent way to enjoy this fine cut of meat. The marinade can also be reduced and used as a sauce.

I don't have a clue where my Dad got this particular recipe, but he used to build it during hunting season when we had fresh venison (elk, antelope, mule or whitetail deer), 'hanging and aging'. I still make it when the opportunity presents itself.
