So very good. I have never made Risotto before and this recipe was very easy to follow. The only thing I found was that it calls for Shallots, which are very expensive. I found that they were a lot like red onions. Next time I will substitute red for the shallots.

WOW!!! This was my first shot ever at making risotto and it was incredible!! EASY EASY EASY!!! And it tasted SO good...Had a friend over for dinner and she raved about it as well!! This is a keeper!!

This recipe is perfect as is. I used the origional amount of mushrooms and added some sun-dried tomatoes at the end, only because I had them on hand and wanted to use them up.

This was incredibly easy to make! I had to adjust for what I had on hand (3/4 of a package of white button mushrooms, yellow onion instead of shallots, and no chives). Granted, I've never even had risotto before- but I loved it. This went very well with the rack of lamb we had for dinner.

Worth the work. Fantastic. I actually used Vermouth instead of plain white wine since I didn't want to crack open a half bottle. I was a little nervous about it but it turned out great.

Mmmmmmm, comfort food. I made this as a side dish for our Valentines Day dinner, and we both loved it. I may have overcooked the rice just a little (it was more mushy than "al dente"). But it still tasted delicious. I did double the wine and reduced the broth to give the dish more of the wine's tartness. I would definitely recommend doing that. I also cut back on the amount of mushrooms called for, and I used all baby bellas (no white mushrooms). Fabulous! :-)

Amazing recipe. I've made it about 10 times and it always turns out great. I add more wine and less broth because I like a nice wine flavor. I also add some dried mushrooms if I have them on hand. I am vegan, so I substitute the butter for margarine and offer Parmesan separately to guests who want it. I've made other risotto recipes and been disappointed so I won't bother anymore - I'm sticking with this staple. Thank you!

I halved the amount of mushrooms used, but otherwise I followed the directions and this turned out great on my first try. This is going to become a regular in our household. Great recipe.

Add 1 tsp of ground turmeric seasoning to give this tasty dish an appetizing golden color without altering the flavor. I've also added fresh lump crab meat, shrimp and a variety of my favorite mushrooms...delicious!!!

Fantastic. I subbed small onion for a shallot, left out the chives(out) and used only portobellos and double the parmasean, and it was awesome. Very easy recipe, and it was fantastic!

Excellent base receipe. We will sometimes add in chicken sausage, spinach, and a 1/4 cup of blue cheese crumbles. Love it!

The only bad part was all the stirring, but the recipe was very easy. I made it about 45 minutes ahead of time and put it in the warming drawer and it held great. I did cut back on the mushrooms because it did seem like alot, however I would not have mined a few more. Very Tasty.

This was okay, and my first attempt at risotto. My husband really didn't care for it and I guess I prefer the cheese risotto I have had in restaurants. Maybe the mushroom flavor was a little too strong, even though I love mushrooms. I might try it again with some other flavors
