I just made this again. I used garlic powder instead of salt and that made all the difference in the world. The sandwich doesn't need the extra salt. I also skipped the mayo like I did the first time. I've been making this with plain white bread and it works fine although I'm sure french bread or some other bread like foccacia would be awesome. A tip I have when making grilled cheese sandwiches of any kind is to use partially or completely frozen bread. The bread will hold together better and you won't break it when you slather on the margarine or butter. It doesn't add to the cooking time and you end up with a nicer looking sandwich!

I had a similar sandwich at a bed & breakfast but could never find the recipe. This is soo good! One hint: Let your cream cheese sit out to soften.

very rich for a sandwich but delicious if you like this type of flavour. i cut back a little on the garlic salt and added 2 slices of chicken bacon... make sure you use good bread

Not a good sandwich. I cut the mayo more than in half like other reviewers suggested. It was just WAAAAYYY to rich for a sandwich. I have a suggestion though. Because the recipe sounded so good for the sandwiches, I mixed up extra thinking that this would be something yummy for lunches during the week. When none of us liked it I was upset about the wasted ingredients. I decided to add a little chopped green onion to it and it's a delicious cracker spread!! Try it for a cracker spread...skip the sandwiches!

I love this recipe. However, I did not use the mayo either. My girls and husband loved it. Definitely rich, so I made it again using just the Jack cheese, no Colby and it was even better that way. I highly recommend this one though! Excellent flavor.

This was much better than I expected. I enjoyed it. I only made one sandwich and because of other reviews I cut the amount of mayo in half. I didn't have garlic salt so I left that out. Also I used a mix of shredded Jack cheese and shredded cheddar cheese. It came out good. You can really taste the cream cheese and mayonnaise. I liked this one.

When I put these on the table for lunch my husband looked at me like I was insane. He then took a bit and loved it. The cheese is gooey and a little tangy. I forgot to buy the colby-jack so I used shredded cheddar and they were great. Also, because my husband is convince a meal without meat is only a snack I added some sliced deli ham. The ham makes it a little more difficult to eat the sandwiches as they tend to slide apart. I also added a little fresh cracked pepper and dried dill weed to mine. I will make these again for sure. They are very filling, fast and easy to make. Thanks Sarah for a great weekend lunch recipe that is not boring.

We found this recipe to be too rich. Even w/o the mayo, I don’t think I’ll be cooking it again. All of the ingredients are things I like, but apparently not all of them together. However, it was easy to make, and w/a few modifications would be a favorite!

I was planning to make grilled cheese sandwiches for lunch and I looked on this website to see if I could find something a little more exciting and found this recipe. I cut the recipe in half for only two sandwiches and used neufchatel cheese for less fat along with LF mayo (only 1 T for both) and 2% cheddar. We enjoyed the richness added by the cream cheese but did not care for the mayo. Next time, I will leave that out completely.

This is a very rich sandwich, but very good. I made minor adjustments to the amounts of the ingredients. (Honestly, I didn't measure...just added until it looked right to me.) Due to the richness, my husband and I cut one sandwich in half and shared it with our soup. We discussed the addition of finely diced ham, tomato, onion, even roast beef. I think that it is too heavy for most of our simple meals, but may make an excellent addition to my appetizer list for parties.

I followed the advice of the other posters and cut the mayo. I too added mozzarella instaed of the colby/jack combo I believe this recipe called for. Everyone in the house LOVED this recipe. All the kids raved and so did my husband. A rare accomplishment here at my house of seven.

TASTY! I put some thinly sliced tomatoes on the cheese mixture, and I cut the mayo to 1/4 cup. I had to use taco seasoned colby-jack cheese because that's all I had (which I thought would make it taste gross, but it didn't) YUM, I will make this again & maybe add some salami. Thanks Sarah!

This was a good change from a normal grilled cheese. However, it calls for WAY TOO MUCH mayo! Next time I would use half or maybe even a quarter of the amount and add more cheese. Aside from that, the flavor is yummy!

I'm sorry, but we didn't like this one. I cut down on the mayo to 1/2 c. and the garlic salt to 1/4 tsp. and it was still WAY too rich and way to salty! After a couple of bites it went in the garbage can.

Wow! This was really rich! I think it was maybe a bit much mayo and salt. Maybe if I used less of the mixture on the bread it would not have been so rich. The bread browned too quickly even on low not giving the cheese time to melt. I think it would have been good if I just adjusted it more to our taste. My hubby had the same review..neither of us could finish the sandwich! I'll try again once more..with the adjustments!
