Great with some minor changes:
After applying the cheese to the chicken as directed, cover the cheese with a slice of prociutto. Thighs don't roll easily so just cover the chicken/cheese/prociutto with another boneless skinless thigh. Spray with olive oil and dust top with breadcrumbs. Cook as directed.
Beside the fact that our chicken was raw in the middle after we baked it for 35 minutes, this chicken didn't have much flavor. The cheese added a bit, but it needs garlic and maybe lemon to liven things up.
We love chicken thighs & gorgonzola, so this was a natural. I rolled in panko w/ granulated garlic added to panko.
Quick and easy, a big hit with my family. As the first reviewer mentioned it took longer to cook than the recipe called for. I used a thermometer to insure proper temp. I will make this again and try the prociutto suggested by wrclarke
i did mine with gouda instead of gorgonzola, and VERY random cracker-based bread crumbs but it was awesome!!!
Very quick and easy to make. Elegant enough for company and DELICIOUS!!! About 15 minutes of prep and 20-25 min to bake. I made te recipe exactly as stated and got rave reviews from my family. This is definitely one I'll keep handy for quick family meals and for entertaining!
