I think it's all my fault that this cake didn't work for me. I modified the recipe on my first attempt by decreasing the sugar to 2 and 3/4 cups and then adding lemon juice and zest to the cream cheese topping. Big mistake - it didn't set properly so I had to overbake the entire cake. The taste was lovely though. My cake turned out to be more of a chewy slice, I topped it with icing sugar and am serving it at a morning tea today.
I do want to make this cake again but I will follow the recipe properly and instead of vanilla essence for the cream cheese topping, I will use lemon essence but no lemon juice, the extra liquid spoiled my first attempt.
