I made this for my kids and me today, and we loved them! Frankly, I'm baffled by the disparity in the reviews and am glad I tried it before reading any of them.
I followed the recipe *almost* precisely (I substituted my homemade coconut milk in place of regular milk), and did not experience any overwhelming saltiness or baking powder aftertaste whatsoever. (I used unsalted butter and sea salt.)
In lieu of traditional syrup, we topped them with my chunky strawberry syrup (sliced a pint of strawberries, added a couple tablespoons of sugar, and simmered over medium heat while I cooked the pancakes).
I scooped my batter with a 1/2 cup measuring cup and cooked them on a cast iron griddle over a gas flame. I don't know if any of those things bore any particular significance, but our pancakes were perfect, fluffy, and tasty! The recipe yielded 7 medium-size pancakes—two for each of us and an extra one for the kids to split (which they wolfed down sans syrup) while I washed the dishes.
This recipe earned five stars from me. I'll try with various additions (vanilla, pumpkin, buttermilk, chocolate chips, etc.) in the future, but it really is just fine as it is written!
