Just made this tonight for the first time and it was fabulous!!! Actually it's the best cornbread I have ever made. I didn't have cornmeal, but I did have polenta which is just a coarser grind. I finely ground it in my vitamix blender and used it. Yum! I baked my cornbread in a convection oven. It came out wonderfully crisp on the outside and sweet and moist on the inside. This will now be my "go to" cornbread recipe.

Quick and delicious cornbread that pleases everyone. I usually serve this as a side with the Vegetarian Chili by: Karen Hunt. Great together!

I made this recipe last night because I ran out of the boxed Jiffy Mix Cornbread and it came out delicious. It was moist sweet and buttery just how we like it. I doubled the recipe because I have a large family. This recipe was easy and I already had all the ingredients on hand, no need for me to use the Jiffy Mix anymore this recipe is a keeper!

This cornbread was deliciously moist and sweet I did however reduce the sugar by half a cup and added 1/3 cup of honey and sliced all beef hot dogs up into the batter and baked up some corn dog muffins! They were a huge hit with kids and adults alike last night thanks for this recipe.

The first time I made it I followed the recipe exactly. It was good but you could taste the baking powder. The next time I made it, I reduced the baking powder to 2.5 teaspoons and substituted melted butter for the oil. It had a much better taste.

I just made these (as mini muffins 8 minutes) and they are yummy. I did think it was odd that some found them too sweet. I thought they could use a little more sugar. Then i realized i had left it out altogether. Still yummy and great texture. I'll try to get them right next time. Soon, i hope.
