Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon ground cinnamon
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 (15 ounce) can sliced peaches, drained and chopped

Directions

  1. In a bowl, combine the dry ingredients. In another bowl, combine the eggs, oil and vanilla; stir into dry ingredients just until moistened (batter will be thick). Fold in peaches.
  2. Fill paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
