INGREDIENTS
1/2 cup stick margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 cup milk
3/4 cup corn syrup
1 teaspoon vanilla extract
3/4 cup old-fashioned oats
3/4 cup flaked coconut
1 (9 inch) unbaked pastry shell

DIRECTIONS
In a mixing bowl, cream margarine and sugars. Add eggs, one at a time, beating well after each addition. Beat in milk, corn syrup and vanilla. Stir in oats and coconut. Pour into pastry shell. Cover edges loosely with foil. Bake at 350 degrees F for 40-50 minutes or until set. Cool on a wire rack. Refrigerate for at least 2 hours before serving.

This pie was very good, but definitely sweet! I followed the recipe as stated except subbed butter for the margarine and cut back on the white sugar because my coconut was sweetened. I used a pillsbury pie crust and used a 9" pie plate, batter looked slightly runny. I also had to cook mine about 10 minutes longer than the recipe states. My only problem was the crust stuck to the bottom of the glass pie plate TERRIBLY! I chilled for 2 hours before cutting and hoping after chilling overnight I will have better luck getting it out of the pan. I think the corn syrup may have leaked through the pie crust.

I wish everyone could taste this pie! The filling tates like coconut caramel and it's wonderful! The recipe made more filling than my pie pan could handle so I baked the extra in a ramakin and that turned out delicious too. It did take a little lomger to bake, about 1 hour.

It took me a little longer to bake before it set. (70 min.) It could be my over eather wat everyone liked it. Thank you.
