I didn't have coconut, so I skipped that. I used 1/2 cup of honey (I love honey) and added some flax seed and about 1 tsp. of vanilla. I also added some dried cranberries along with the raisins. I only used about 1/8 tsp. salt. Came out pretty good!

I did like the honey/cinnamon/butter combo--the taste is good, although I like mine sweeter. I don't like raisins & left them out, so I'd like to try it again with a little brown sugar to compensate sweet-wise. Even though I used unsalted butter and half the salt, it was still too salty for me. I almost burned mine at 45 minutes, so watch it carefully.

Mmmmm, this is competing for my fave granola recipe on this site: Almond Maple Granola! I really like the combo of butter, honey and cinnamon in this one. I couldn't stop eating it when I pulled it out of the oven. I can't wait to eat it for breakfast with fresh berries and yogurt!

I added a splash of vanilla, omitted the walnuts and used dried cranberries in place of the raisins. I cooked if for the entire hour and thought it tasted pretty good.

I enjoyed this recipe because the ingredients were so natural, not using refined sugar and using butter instead of oil.

This granola was OK for me. I like more sugar and maybe more crunchy sweet clumps. This granola did not clump at all.
