Indian Cauliflower

This not only tastes glorious, but it looks glorious as well. The cauliflower is brushed with oil and turmeric before being baked whole in the oven. A curry sauce is whipped up and poured over the golden cauliflower when it emerges from the oven.

This is a simple and easy to toss together recipe using cauliflower. Serve this dish with Indian breads such as thin rotis or naans - even a pita bread will do! Garnish with cilantro if you'd like. Asofoetida can be found in some grocery stores, but will most likely be found in an Indian grocery store, it is often called 'hing'.

The crust for this delicious pie is made from grated potatoes. Lots of Cheddar cheese goes in next and then a lovely sauteed mixture of grated cauliflower, onion, garlic, thyme and a generous sprinkling of paprika. Bake until firm and crusty brown.

Cubed beef is simmered in a spicy liquid until nearly dry, then combined with an onion mixture seasoned with curry leaves. It's delicious served with white rice.
