4 of my kids looked at it and said yuck, but then tried it and ate 3 big servings each. I chopped the chicken in the food processor so it didn't "look" as appealing as it would have diced. Using a G.Foreman grill made this a very quick lunch for us.

I've made this twice now, with no changes. Everyone who has tasted it loves it, and wants the recipe. The only thing I might do next time is add some chopped walnuts. Other than that, why mess with perfection.

This was a very delicious recipe, however, it seemed to be lacking something, so I made a few modifications to mine. I added 1 cup of seedless, red grapes, 1cup of chopped pecans, and 1 cup of shelled, unsalted sunflower seeds.I also added 2 cans of mandarin oranges (in light syrup) and I reserved 1 can of the remaining syrup to add into the mixture. Served with croissants. My family raved about it for days and my husband even took the leftovers for lunch, and came back with everyone wanting the recipe.

Very good flavor. I like this recipe because it uses kitchen staples that we almost always have on hand. The only thing I changed was I used finely chopped orange bell peppers instead of the apple because I was out, and it was great. 4 1/2 cups of chicken seems like way too much to me, but I guess it depends on how you chop it. I chopped mine pretty small for a sandwich and 2 cups was plenty (about 4 breasts). Will make this again for sure!
