Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Stir milk, grits, egg, cocktail sauce, 3 tablespoons ketchup, onion powder, salt, and black pepper together in a large bowl; add ground beef, mix with your hands until the texture is consistent, shape into a loaf, and put into a loaf pan. Spread 1/4 cup ketchup over the meat mixture.
  3. Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

  • If you are strict about gluten-free, make sure your cocktail sauce and ketchup have no gluten-containing ingredients.
  • You could also make this with ground turkey instead of beef.

Well, I should have gone with my intuition here. I was sort of taken aback that this recipe should call for "1 pound of ground beef, or more to taste." As it happens, the massive amount of milk called for made beef soup. I ended up adding an additional pound of beef and another 2/3 cup of grits -- to texture, not to taste... and I still felt it was a little loose. Flavor wise, this meatloaf is unimpressive at best. Perhaps if I hadn't had to double the meat and triple the grits, it would have been better, but the cocktail sauce might have been overpowering, too. I couldn't get excited about this meal, despite the fact that I think grits in meatloaf is conceptually brilliant. No applause from the peanut gallery, either. I am inspired to experiment with them in the future.
