Gingered Mango Salsa

INGREDIENTS

  • 1 cup chopped peeled mango
  • 1/4 cup chopped red onion
  • 1/4 cup minced fresh cilantro
  • 1/4 cup lime juice
  • 2 tablespoons minced fresh mint
  • 1 tablespoon minced fresh ginger root
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon salt

DIRECTIONS

  1. In a bowl, combine all ingredients. Let stand for 30 minutes before serving.
