I made two batches of this recipe. The first batch was very crumbly, but after really packing it into a ball and chilling it they tuned out delicious! The next batch I used vanilla pudding mix and slightly more butter and less flour. They turned out excellent and were very easy to work with. Thanks for a great Christmas recipe! Santa will love them!

These were great!! I am usually not a fan of roll out cookies, because of the time involved, but these are worth it...I plan on making them again next year.

I have made these cookies at Christmas time for the past 2 years, and they are always a hit. I have had more people ask me for this recipe than any other I have found on this site. I usually double the recipe because I find it never makes as many as it says. Could be that I roll it out too thick. It is not very spicy, but that is easily adjustable depending on your personal taste. I LOVE this recipe!!

I LOVE this recipe! I don't think you even need to refrigerate it before rolling. For the person saying they are dry, I think that makes it easier to roll. I used instant pudding (by accident) and I thought they turned out great. Try these if you are looking for a lighter tasting gingerbread cookie.

This was excellent and easy! I used the pumpkin spice pudding mix because I couldn't find butterscotch...they were very tasty, the dough recipie is fast to prepare and easy to roll! Wonderful!

We made Eilen's Spicy Gingerbread Men a few weeks back and thought they were great (but spicy, just like the recipe says). Then today we gave this recipe a whirl. It was terrific. The dough was very brittle, almost dry and made about a dozen and half 4 inch men for us. We don't roll our dough very thin because of preschool age children break very thin cookies much easier! The taste was top notch. Not spicy, but just warm and yummy. I was surprised I couldn't taste a strong butterscotch flavor, it was there, but very subtle. I must also disclaim I used instant pudding instead of cook and serve as the recipe called. I didn't do this intentionally, but b/c I didn't copy the ingredients down to my shopping list correctly. I will try it with the cook and serve version and re-review.

These cookies tasted great and my kids and I had a blast making them (and eating them). I really liked not having to deal with sticky molasses or maple syrup with the kids. I wasn't able to get the "cook and serve" pudding mix in butterscotch and ended up hoping for the best with three 1oz boxes of "instant" mix. My dough turned out crumbly at first, but I added another half a stick of butter and it turned out beautifully. I also used the icing recipe posted by the reviewer AUTUMNJOY and that also turned out great. I like that it doesn't have raw egg in it like royal icing recipes usually do. It tastes great, too. I gave each kiddo a ziplock with a tiny corner cut off and we all decorated. I used regular vanilla extract, but this would be a good recipe for the clear if you have it around. There was a slight tint to ours, but you really couldn't tell once it was on the cookies.

Very easy to make and dough rolls out nicely. Just did not care for the taste. For me the pudding mix gives it an off taste. It is a much milder gingerbread that I think would be liked by kids. Thanks for sharing Kim.

I made these with my Kindergarten class and they turned out soooooo well. The kids loved them as they didn't have that overpowering flavor. The dough was a little dry ad tricky at first, but just keep at it - it is worth the payoff. Ours jumped off the pan and we had to hunt through the school to find them! Run, Run, as fast as you can!

These were excellent and very easy. I doubled the batch and made 45 gingerbread men. I cut them thin so they were nice and crisp. The only change I made was to add a couple shakes of cloves into the flour mixture.

These were the most perfect gingerbread men cookies I have ever made for my little ones. The taste wasn't so overwhelming and the texture was perfect. This is definitely my new gingerbread recipe. I don't care so much for molasses so this is perfect.

I may try this recipes again. I found it because I had butterscotch pudding I needed to use up. The dough was very crumbly. A little more moisture could eliminate this, I think.

I couldn't find butterscotch pudding mix and my local store, so I improvised two different ways. Both turned out good! For the first batch, I used vanilla pudding mix and chopped butterscotch morsels. For the second, I used Pumpkin Spice pudding mix. It was a limited edition flavor for the holidays. I liked these cookies both ways, but I will still be on the hunt to find the butterscotch pudding mix so I can try the original recipe.

I can't say enough about this recipe. I've made it three times now and each time it's a HUGE hit. Usually gingerbread men look beautiful but the taste leave something to be desired. These are easy to make, easy to roll out, bake wonderfully, and taste incredible.

This was the best, easiest, tastiest roll out cookie recipe I have ever made. Loved it and now I want to experiment with different pudding mixes and flavors. I did make the dough the day before rolling. It turned out flawlessly. Thanks!

This recipe was wonderful! Super easy, and such a great flavor to them. My daughter and I had a great time making these yummyholiday treat! Pointer, I baked them at 300 for the 12 minutes and they came out a little softer!
