Ugh this recipe was a pain. It was easy to get all the ingredients together but I was having a hard time getting the baking time right. I made two whole batches and I think my last couple trays of cookies were okay, but there were countless burned ones and undercooked ones. It was hard to tell when they were "just right" until they were cooled. I'm just making the traditional ones next year.

This recipe made Christmas extra special for me and my grandchildren. These cookies were easy to make. I didn't make the royal icing in time so they didn't have all the trimmings, but they had the cinnamon candy buttons. We loved them! This was the first time we ever had homemade gingerbread cookies at our Christmas gathering. Thanks so much, Kim.

I made this with my siblings, younger cousins, and boyfriend and it was fun to make. I did have a problem with the fact that it didn't stick together, but we added extra water (1 tablespoon at a time- couldn't have been more than 4 tablespoons) and let my fellow youngin's get a try at rolling the dough out and cutting out the shapes with the cookie cutter. No one wanted to eat them because they were so adorable after decorating them with gumdrops, M&M's, Mini Kisses, and different colored icing. We had so much fun food coloring the icing! Eventually, everyone got a taste of them and gobbled them up. We didn't get many cookies though. Next time will make more batches at a time.

my 7 yr old wanted to leave santa gingerbread men for xmas...santa doesn't like traditional gingerbread men & nether does my son BUT...they bothed loved these cookies so much & i was relieved how well it rolled out & was easy to work with..THANK YOU!

Awesome! Best Gingerbread Ever! Not at all like concrete, soft and chewy, delicious! Will probably add a bit more Ginger next time and maybe some cloves!

WOW!! The best gingerbread cookie I've ever made. Not good for houses-too soft but as a cookie perfect, easy to make, stores well & freezes well. Made a triple batch then had to make another double batch just before Christmas since my family kept sneaking them before I made up my cookie trays. People are calling me raving about the gingerbread men- Thank you!! This is surely a keeper!

These went over really well and aren't too strongly flavored. Pretty easy to make but I could not chill my dough very long because it made it too hard to roll out. I will most likely make these again next year, which is the best compliment.

My 4-year-old son and I made these for Santa. He had a blast rolling out the dough, cutting out the men, and then decorating them after they were cooked. We taste tested them and they were delicious. I think Santa liked them too because there were only crumbs left on Christmas morning.

OMG! These are fantastic! The only problem I had was I didn't make enough. Even my 16-year-old daughter, who doesn't like gingerbread, loves them. I didn't change anything in the recipe -- the cookies are not too gingery, easy to make, and taste incredibly yummy! Enjoy!

I just love these cookies. The flavor is subtly spicy and sweet, and my husband and I get to team up to make them, as I like to bake them and he enjoys decorating! Once our little one comes along, I suspect these will be a nice family tradition for us. Thanks for posting!

This is a great recipe---I've given it to several friends already. If the dough seems crumbly don't be discouraged; just keep working it and the heat from your hands will smooth it out. I doubled the ginger also, which was pleasantly warm (yet not offensive to my 6-year-old).

Very yummy cookies! The dough kept sticking to my countertop, so make sure you use plenty of flour. Also, if you roll the dough as thin as 1/8", these taste more like butterscotch graham crackers. They don't need frosting... but they are ADDICTIVE! I used Mini M&Ms for decorating. This is a keeper! THANK YOU!

So yummy- with or without frosting on top! Doubled the spices and added 1/2 tsp. nutmeg. Baked for 8-9 minutes. Great recipe. Fun with the kids! Will make again next year! Merry Christmas!
