great cookie, easy kid(helping) friendly dumping into a mixer. smell and taste great. i added a bit more flour when rolling and forming. they do spread more than i thought they would and my 1" spacing in places wasn't enough. i can't wait to decorate and make for christmas....this was the recipe testing batch.

Wonderfully delicious. All of my kids love this recipe, even the picky eater. The only downfall is that it doesn't make that many and I have to make a double batch

Yummy. I used vanilla pudding instead of butterscotch (it's all i had!) and added 1/8 t allspice and 1/4 t nutmeg. added the pudding mix dry and creamed butter and sugar with it - the mix starts a little dry and crumby, but once you squish it all together it feels more like a cookie dough. the dough was a little hard to work with right out of the fridge, but got easier as it warmed up. these are a lot less gingerbready than 'real' gingerbread cookies, but are super yummy in their own right.

This was a quick, easy recipe and came out nicely. I think that people that find regular gingerbread cookies too "strong" will like this alternative. Jennifer, you don't need to make the pudding, add it dry as it says. I think the only thing you did wrong was that you probably gave up on mixing it to soon. The dough needs to be "dry" so that it will be stiff enough to make rolled cookies. Try it again and keep mixing it. It might help to do it by hand. Wash your hands (clean your finger nails too) and lightly kneed the dough with your hands. By the time you chill it and then roll it out, you will see that your dough is just right.

Dough turned out perfect -- it was soft but not sticky at all. The cutouts had a nice light spice flavor. I used mini cookie cutters and poked holes through a bunch to make little ornaments.

Great recipe! I have been using this recipe for years now and I make these for my son's birthday. His former teachers start hounding him every year because they can't wait for me to send in "extras". They always turn out perfect and are easy to roll and cut. I decorate them with M&Ms and white icing. *You can use instant pudding mix but they're not quite as good.

Yum! I tried these out of curiosity because the recipe was so unlike my traditional molasses or ginger cookies, so I wasn't expecting much. I was surprised at how easy they were to stir together, how nicely they rolled out, and how tastey they were when finished. I didn't roll my dough quite so thin so the cookies were a little more chewy. Really great recipe...thanks for sharing!

These were a hit. My 5 year old was sure he didn't like gingerbread because he had some traditional gingerbread cookies last year. He tried these and loved them. I haven't tasted them personally because I can't have sugar but the dough smelled heavenly and my whole house smells yummy. My husband likes that they are soft but as a grown up would like them a bit spicier. I had no problem with the dough being dry. In fact it was very moist but I did melt the butter a bit. I don't think spacing them 2 inches is neccessary because they don't puff much at all. Which is great because they keep their shape nicely. Great recipe for the kids and those that don't care for traditional gingerbread. Thanks!

Jennifer, It is hard to mix at first, but if you get your hands into it and start kneading, it will come together. Very excellent recipe! This is the first time I've baked gingerbread (or made from scratch cookies for that matter) and they came out great! Thanks!

Though these were tasty, these are more of a sugar cookie shaped like gingerbread men. Also the dough was so dry I ended up adding another egg just so that they wouldn't fall apart, when rolling and cutting-also had to use my hands to press together. I am surprised more comments have not been mentioned on the crumbliness of this dough.

I liked this a lot,or atleast more than most sugar cookie recipes.I am going to use this as my rolled cookie recipe for decorative cookies this year. Not really strong ginger flavor, but it is there. I don't usually like gingersnaps either!

When you cut out your cookies they should be on your cookie sheet. Just peel the dough off of the sheet and the cookies will be perfectly shaped. Also, chilling the dough overnight really helps with the texture and ease of rolling.

I really loved this recipe! I've been searching for the perfect gingerbread cookie recipe, and this is it. I did follow the suggestion of a preview reviewer and melted the butter first, which seemed to help. Chilling in the fridge for an extra hour also helped, as the second time I made this, I only chilled for an hour and the gingerbread men started coming apart when I would pick them up to place on the cookie sheets. Also, I did not bake for any longer than minutes as the do harden quite a bit as the are cooling. Great recipe!!!

I made these cookies last year for the holidays. Our family tradition is to make 2 or 3 new cookie recipes to our neigbor's cookie trays. Even though I enjoyed the flavor, the dough was dry and not easy to work with. My husband didn't care for them so we won't be making this year.
