Baked perfectly. I too used a 9x13 pan. Has a very light, delicate and moist crumb. double the spice. its not intense, but very good.

I did not care for these. I am quite the experienced baker, and I had reservations from the very start, but thought I'd give these a try anyway, as I love molasses and ginger. Knowing that the recommended spices were FAR too little, I tripled them. The taste was still just okay, they were dry and way too fluffy. My oven was set properly (I have a thermometer to make sure). I used the recommended pan size and followed the directions, except for the spices, exactly. Would NOT recommend.

The bars were moist and flavorful. I swapped out the shortening for butter but left all of the other ingredients the same. I used a 9 x 13 pan (which I greased and floured to aid in getting the bars out based on descriptions that this recipe is cake like) because I didn’t have a 10 x 15 pan. Since I used a different pan size the bars cooked for 25 minutes. I put the pan on a cooling rack for 15 minutes and then removed the the bars from the pan and let cool directly on the rack the rest of the way.

Delicious! This dessert was more like a cake than a cookie bar. I did double the spices, but otherwise followed the recipe and it came out moist and tasty.

The Ginger Bars were delicious. Th were kind of hard to cut out of the 9 by 13 pan I used. But over all they were delicious.

SO good! Light and fluffy! I didn't have a big enough pan, so I used two smaller pans. The bars were a little thinner than the photo shows - but they are delicious! not too spicy - just right. Soft, fluffy and incredible!

These did not pack quite the flavour punch I was looking for. They are very light, not the dense gingerbread I was expecting. Update. This are actually better after they've sat for a bit, the flavour seems to intensify. They were very well received at a meeting I attended, so I think I will increase my rating from 3 to 4.
