Leftover Roast Brunswick Stew

Submitted by: AMYLYN914
This is a very good Brunswick stew made with last night's leftover pot roast. Southern style BBQ sauce works best. Don't use honey BBQ or other really sweet sauces because they make the stew too sweet.

Hearty, filling and man-pleasing describes this stew. Link sausage, cumin, chilies, and chili powder is what gives this soup its southwest flavor. This dish is quick, easy, and tastes best when it simmers in a slow cooker or even on the stove all day. Bake some Mexican cornbread, toss a simple green salad, and you have a great meal.

Like a thick hearty soup, this stew is packed with tender chicken and an eye-catching combination of vegetables. I could never wait patiently to eat when Mother was cooking this stew. --Milded Sherrer, Fort Worth, Texas

This recipe is adapted from a recipe shared by our Aunt Dot. The ground turkey makes it healthier, although ground beef can be used instead. Can be made in a slow cooker for an easy yummy meal! Good Virginia cooking!

Corn adds a sweet crunch to this hearty beef and vegetable soup. Canned veggies make it a breeze to throw together.

I learned this recipe in the Boy Scouts and it is the perfect recipe for guys living on their own. It's quick and easy and very difficult to mess up. If you have a slow cooker, let it stew for a day or so. You'll be ready to go out and herd cattle after eating this!
