So yummy! I squeezed the potatoes mostly dry before I mixed it with the other ingredients. I followed the rest of the recipe exactly and they turned out great! I'll try making it with cooking spray next time because it was pretty oily.

Delicious! Just like Mom used to make. She did her potatoes in the blender but I used the food processor to shred and it was much quicker. But I think the blender version makes neater and more uniform looking instead of the jagged edges from the shred. Either way, it works !! Season to your taste and YES do drain them or they will be too wet ! I always serve with sour cream and applesauce.

These are really delicious and easy to make. I prefered the color and more delicate taste of green onion in mine. I didn't have a problem with it getting grey/green, just rusting, but it doesn't affect the taste. So good that my husband asked me to make them two nights in a row!

VERY very good. I did blot the water out with a papertowel. Served w/ sour cream for the adults and ketchup for the kids. Yum! We all wished we had more.

This recipe takes me back to when I was little! I've been looking for a recipe with this particular "taste & texture". I did add 1 more egg, 1 more tbls. flour & upped the baking powder to 1/2 tsp. as it didn't seem to be enough for the amount of potatoes I shredded. Also, I used a sweet onion. The potatoes were brown by the time I cooked them, but it didn't affect the flavor or the outcome! They turned out perfectly!

Great recipe, I had issues in the past with potato pancakes falling apart during frying. This recipe held together perfectly and tasted really good. I served them with sour cream and applesauce. YUM!

This is a great, easy recipe for potato pancakes. My family loves them! I am not sure if the original recipes says this, but once the potatoes are shredded, completely cover them with cold water so that they will not turn brown. Also, drain VERY well before you put the potato shreds into the recipe.

These were the BEST potato pancakes I've ever had! I didn't change a thing, but I did take one reviewer's suggestion of soaking the shredded potatoes in cold water until I was ready to use them. They stayed nice & white and drained easily. This is a new favorite for our family - yummmmmmmmmm!!
