I gave these 3 stars, but after modifying it a few times it could be a 5. I like others used cheese soup in the mayo mix as well as some diced velveeta (although not nearly as much) I sauteed the onions and added a little chopped garlic while they were cooking. I also diced the uncooked potatoes, tossed them in oil, added salt and pepper and roasted the potatoes until they were light brown. I took this version to my families Easter, and everyone really liked them.

I have been making the german potato salad and absolutely love it (cold, that is). This is new in that it had cheese in it. I prefer this casserole heated, but it still gives me that tangy taste that i crave. I added parsley.

Very well-received at a recent Oktoberfest girl's night. Only changes I made were to steam the potatoes with skin on (as opposed to boiling and peeling) and then just cut into rough chunks. Very savory and tasted even better the next day as leftovers

My husband and I threw an Oktoberfest party yesterday. This was one of the dishes we made and it was Fantastic and quickly disappeared. I will be making this many times again.

This was wonderful. I, like others, cut the recipe in half. I served it with really good quality german sausages and cooked red cabbage. Sure felt authentic and fantastic for a cold winter meal. Thanks for sharing it. One day I'll try it with the cheddar soup for something different.

The whole family loved this! We used good thick bacon and added lots of sausage slices. We left out the hard cooked eggs just because I didn't have time to boil any. It is a good home cooked, comfort food recipe. It's simple to make and makes the house smell delicious! Made this a second time with the boiled eggs. Delicious! Wish I had added even more eggs!

Wonderful recipe! I'm not German but our dear friends who are coming to dinner are. I wanted to make an Oktoberfest style potato casserole & this is THE one!!! We also baked pork ribs over seasoned saurkraut and helping me look like a REAL cook!

Warm and quite tasty, this was a big hit at lunch today, not one bite was left in the dish! Try as written or with my 2 modifications 1) boil the potatoes whole, then peel and chunk and 2) used two layers of shredded mixed cheeses instead of Velveeta. :) PS.modified to 8 servings too.
