I dont know what happened but the bottom of mine was very soft and mushy but it turned out to be a good thing. The batter is really thick and it actually broke my mixer so I dont suggest trying to use a hand mixer for this one. But in the end it was delicious. One of my roommates apparently woke up at 2 in the morning just to eat more of it. It was gone by morning. when i made this recie the second time the inside still didnt cook so i kept it in longer thinking that would help but it just ended up becoming hard.

This cake has become an instant family favorite. I could not believe how moist this cake was. The semi crunchy top was a welcome surprise. This cake is a keeper.

This is great. Good taste, nice and moist with a good texture. This is not a fancy cake, something you might have with tea or as a bunch item.

Awesome! If you use icing - employ the "less is more" philosophy. The cake speaks for itself. Either use confection sugar or drizzle icing on. Great Cake!

After reading a lot of the reviews I Used Whole Wheat Graham Flour, egg sub, 1/2 cup unsweetened applesauce & 1/2 cup oil than sprinkled a little cinnamon and sugar on the top as the cake came out of the oven. My husband and daughter don't even know that it is lower in fat. Great Cake that is very simple and quick to make.

Wonderful! Are you supposed to wait for this to cool before you cut into it and eat it?! Well, my family couldn't wait that long! I made exactly as written and went ahead and topped it with Naples34102 suggested "sauce"! Scrumptuous! I was licking the spatula from the sauce and would have licked the pan I cooked it in, if I could have gotten my face in there!! Wonderful recipe! Thank you Barbara! :)

Well it is fall and my family is asking again for this cake! It is in the oven now and smelling like heaven! IT IS 8 YEARS now that I have been making this cake. I know this because my copy was so bad (dirty)I had to make a new one and thats when I noticed the date. It is ALWAYS a hit at parties and truly the BEST APPLE CAKE!

Hubby absolutely loved this, he always wants apple cake for his birthday cake. Even tho it isn't his birthday I thought I would try it any ways and it is the best one I've ever made. I did substitute applesauce for half the oil and used half wheat flour as well.

I followed the directions exactly except I used one large apple. It seemed to be enough when I was stirring it in. This was super thick and after about 30 minutes the middle was hard and the edges were doughy so I took it out of the oven. My son and husband liked it but I didn't care for it. It was not like a cake at all. It was like an apple cookie. Would only make again for them. Sorry!

WOW!! This cake was great. So moist and flavorful. I kept all the measurements the same and used fuji apples (4 large). The cake recipe is great as is. But, I added the caramel drizzle another reviewer recommended and that sent the cake over the top! Really, it was amazing! I'm glad we had company to help eat it or I would have finished it off. Thanks for the great recipe.

This is a great apple cake. I made it for my husband and I and it ended up gone within one day. Everyone that came over took some home they loved it so much. Looking at the reviews I did add 2 Tablespoons of applesauce and one extra apple to give it more flavor. My grandma keeps asking me to make it again, that is when you know it is great!

I made this cake for an office party we were having and it was a HUGE hit! I did however make some substitutions. First, I did not use 1 c of oil; instead I used 3/4 c unsweet applesauce & 1/4 c oil. Then, I did 1/2 white and 1/2 brown sugar and used whole wheat flour instead of all purpose. I did not put a glaze on it either since it was already sweet enough. I would have been too much. I will definitely make again!!

Awesome cake!! I love how this turned out, especially the slightly crisp top. It's so good! I used only 1 cup of dark brown sugar, which I think is perfect. Everything else I kept the same! It baked only 40 mins for me, but I didn't bake it in a bundt pan (didn't have one), just a regular 9x13. One of the best apple cakes recipes I've made!

You just can't get better than this. I cannot wait to make this cake again. It was by far the best apple cake my fiance and I have ever tasted. I took the suggestion of other reviewers and made the following adjustments: used 1/4 cup of applesauce for the oil substituted 1 cup of light brown sugar for the white suger. Baked mine in a bundt pan for about 55 minutes. Topped with the caramel glaze that Naples provided on her review from this recipe. I used 4 cortland apples. I find they are the right balance of sweetness without a lot of extra moisture when baked. The cake was extremely moist and not over the top sweet. Perfection!!!

I made the suggested changes. Used less oil substituted it apple sauce and used 1 cup white sugar and 1 cup brown sugar. My husband loved it. It had just the right amount of sweetness. Will definitely make again.

Wow, yummy! Made it as written except for the 3/4 cup applesauce/ 1/4 c. oil substitution that many made. Also greased and sugared the pan and made it with 1 c. white sugar and 1 c. of brown sugar. A definite keeper!

i give it a 4. it comes out amazing BUT another reviewer was right when they said the next day it comes out a mushy mess. well not exactly a mushy mess, but over a couple of days it get soggy, like it wasnt cooked through. maybe reduce the oil and up the cooking time. i kept checking mine, and i made it in my grandmothers ages old springform silver pan with ridges on the bottom, so you would have thought it wouldnt have taken longer to cook with the hole in the middle. anyway it was WONDERFUL FOR THE FIRST 24 HOURS!!!
