Gelatin Dessert Squares

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 cup finely chopped pecans
  • 1/4 cup packed brown sugar
  • 1/2 cup butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 1 (8 ounce) carton frozen whipped topping, thawed
  • 2 (3 ounce) packages raspberry gelatin
  • 2 cups boiling water
  • 2 cups cold water

DIRECTIONS

  1. In a bowl, combine the flour, pecans and brown sugar; stir in butter. Press into an ungreased 13-in. x 9-in. x 2-in. baking dish. Bake at 350 degrees F for 10-13 minutes or until lightly browned. Cool on a wire rack.
  2. In a large mixing bowl, beat cream cheese and sugar until smooth; fold in whipped topping. Spread over crust. Cover and refrigerate for 1 hour.
  3. In a bowl, dissolve gelatin in boiling water; stir in cold water. Spoon over cream cheese layer. Refrigerate until firm. Cut into squares.

Yum, Yum!! I let the crust/cream cheese sit for quite a bit longer than called for, because I used Wild Strawberry Jello instead and added one tub of frozen strawberries to it. Let jello sit and set up as reccommended on pkg before adding the fruit, so that's where the extra time came in. The crust is kind of crunchy, and the the smooth creamy top create a very tasty combination.

This was a very good dessert. I used sugar free jello. I would suggest letting the jello cool a bit before putting it on top of the cream cheese layer.
