This chunky cold soup takes a little planning ahead, but it's worth the wait. Beef bouillon is dissolved in pure tomato juice, then just stir in a colorful combination of fresh veggies and set it in the fridge to chill.

A wonderful cold savory soup made with tomatoes, cucumber, green and red bell peppers, and seasonings won't heat up the kitchen on those hot summer days. Garnish with fresh parsley, chives, dollops of sour cream, and toast.

I often find that most gazpacho is a little too acidic or that I only want a couple of spoonfuls. This recipe (which I got from my friend's mother) is AWESOME. It's not too acidic at all and is so wonderfully light and healthy.
