toasted California walnuts, lightly crushed
Japanese (panko) breadcrumbs
chopped fresh parsley
chopped fresh thyme
unsalted butter, softened
shallot, thinly sliced
fresh Brussels sprouts, split in half lengthwise
leeks, white parts only, sliced into thin rings
whole chicken breasts with skin
olive oil, or as needed
pomegranate, seeds only
Gotta add that I very rarely follow the recipe. Subbed apple sauce for the butter in the coating, don't need that much fat. Didn't have Brussels sprouts, so I roasted a butternut squash and cut it up. It was delicious, and I'm sure with the extra butter it could only taste better.
