Garlic and Parmesan Dinner Rolls

  1. Mix yeast, 1/2 cup of flour, sugar, and warm water in a bowl. Cover and let rest in a warm place until bubbling, about 15 to 20 minutes.
  2. Stir in salt, olive oil, and egg. Mix thoroughly and stir in remaining 1 3/4 cup flour to form a loose, sticky dough that pulls away from the sides of the bowl. Cover with a damp towel and let rise in a warm place until doubled in size, about 1 to 1 1/2 hours.
  3. Punch down and scrape the dough from the sides of the bowl. Turn onto a lightly floured surface. Sprinkle with more flour and shape into a rectangle. Roll out to an approximately 10x12-inch rectangle, about 1/2-inch thick. Brush with melted butter; sprinkle with garlic, Parmagiano-Reggiano cheese, black pepper, cayenne, and parsley.
  4. Press flat one long edge of the rectangle and brush with water. From the opposite end, roll evenly into a log. Press the seam together to seal.
  5. Cut into 8 rolls. Transfer to a baking sheet, cut side up. If necessary, cut an ‘X' in the top of each roll to expose filling.
  6. Preheat an oven to 400 degrees F (200 degrees C).
  7. Brush each roll with olive oil. Sprinkle with more cheese. Cover and let rise until slightly puffed, about 20 to 30 minutes.
  8. Bake in preheated oven until the tops are golden brown, about 20 minutes.

Yummy!Yummy!Yummy! These turned out really good and they're easy to make. I watched the video on how to make these from the home page of AR and decided I needed to try them. I even took the ends that I had trimmed off, pushed them together, added a little cheese & garlic to them and got one extra roll out of the batch. I hate to waste things.

I just made these today to go with dinner. They defiantly need something more. I think incorporating some garlic powder and some basil or italian seasoning to the dough mixture would help bring more flavour into the dough.

I made these last week for an easter potluck. Everyone loved them! They are so simple to make. The dough is also very versatile, I doubled the recipe for just the dough (left the egg out) and made two really delicious pizza crusts! Thank you chef john! :-)

OK, I was a little skeptical because the dough was sticky, they didn't look like the picture, but the hubby says they are awesome!! Great taste and texture and next (and there will be a next time) I will know what I'm working with!! Awesome, thank you for sharing!!

Wonderful roll recipe, I'll be making these again. The dough is super sticky and I wasn't convinced they'd turn out. I added a little extra flour (since I'm at a high altitude) and didn't really measure the filling, just sprinkled everything on the rolled out dough. In a fit of extreme laziness, I substituted garlic salt for garlic (I'll use garlic cloves next time). Served with salad, they were great.

Great recipe - really straightforward. My family devoured the buns and the leftover buns were used for sandwiches the next day and still stayed soft. I will definitely be using this recipe again!
