Fabulous faux mashed spuds! Making only one serving, I started with 1/4 head of cauliflower florets. I used whipped cream cheese with chives, added butter, non-dairy creamer (Mocha Mix), about 1/8 c. instant spud flakes, chopped garlic and chopped shallots, and a little shredded parm. Blended to a creamy consistency with my immersion blender, then reheated on the stove. Served as a side to my chicken fried steak with country gravy, green beans, and corn bread. Perfecto!
