Garlic Dill New Potatoes

"Potatoes are tossed in a garlicky dill butter before being served in this fantastic side dish."

INGREDIENTS

  • 8 medium red potatoes, cubed
  • 3 tablespoons butter, melted
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons minced garlic
  • 1/4 teaspoon salt

DIRECTIONS

  1. Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
  2. In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

I boiled the potatoes in generously salted water, rather than steaming them - they were yummy! The garlic dill butter is also very good over green beans.

I used Idaho baking potatoes, cut in small pieces and put directly into crock pot. Tossed potatoes with remaining ingredients and added a little olive oil for moisture. Cooked until tender and the potatoes didn't fall apart. Will definitely make again.

I really enjoyed this side dish! My husband asks me to make it all the time with fish. I do put it in the oven at 350 to let the garlic and dill infuse the potatoes.
