"This versatile dish can be served as a meal or side because its made with quinoa (keen-wah), a complete protein. This fabulous grain tends to pick up surrounding flavors and in this case, GARLIC and CHEEEEEEESE!"
Hmm. None of these ingredients are on sale today.

1 1/2 cups
shredded sharp Cheddar cheese
cubed processed cheese food (such as Velveeta®)
salt and ground black pepper to taste
panko bread crumbs, or to taste
This was my first try at cooking quinoa, and I am a convert!!
I did saute some diced zucchini and red onion first, which I added to the quinoa and some veggie broth as in step 1.
(I tasted it at the end of 15 minutes... and I could have eaten it all right then!)
I followed the rest of the recipe as written, topping with bread crumbs rather than panko (dear hubby shopping foul noted).
In the end, a satisfying and healthy new comfort food!
I've never given a poor review, and we love quinoa and garlic and cheese, but this was BLAND--nearly tasteless, even though I'd used a pepper jack velveeta. I don't even think we'll finish the dish, cause it will be completely inedible without topping it with more cheese or hot sauce or something. I'll try to tweak it to serve it because quinoa is nutritious and rather expensive, but it needs some serious help. Sorry, but I won't be making this again, which is disappointing, considering the quinoa itself smelled pretty good while it was cooking.
